Homemade Pasta

This homemade pasta is soft, tasty, and incredibly satisfying to make from scratch. With just a few simple ingredients, you'll create fresh noodles that cook quickly and elevate any sauce. Perfect for a cozy meal that tastes like it came straight from an Italian kitchen.
Makes 4 servings

Ingredients:
2 cups flour, spooned and leveled
½ teaspoon salt
3 eggs
1½ teaspoons olive oil
Directions:
1. In a medium bowl, mix the flour and salt. Create a well in the center and add the eggs and oil. With a fork, whisk the eggs and oil, gradually incorporating the flour. Use your hands to bring the dough together into a ball, even if it appears slightly dry and crumbly.
2. Transfer the dough to a flat surface and knead with the heels of your palms for about 8 minutes until smooth. Form the dough into a ball, wrap it in plastic wrap, and let it rest at room temperature for 20-30 minutes.
3. Divide the dough ball into 4 pieces. Flatten each piece with your hands into an oval disk about ¼-inch thick to easily feed into your pasta machine.
4. Pass the dough through the pasta roller on the widest setting. Adjust the dial on your pasta machine to a thinner setting and pass the dough through once. Continue adjusting the dial one notch thinner and passing the dough through until your pasta reaches the desired thinness. Lay your pasta sheets on a flat surface and generously dust both sides with flour to prevent sticking. Repeat with the remaining 3 pieces of dough.
5. Run the pasta sheets through your preferred pasta cutter attachment (spaghetti or fettuccine), or cut into your own fun shapes. Cook the pasta in a pot of salted boiling water for about 2 minutes.
NOTES: If you're not cooking all the pasta the same day, freeze the dough by laying it in a single layer on a parchment-lined sheet tray and placing it in the freezer, uncovered. Let it firm up for about an hour. Remove the sheet tray and transfer the frozen pasta to an airtight container (you can stack the pasta since it's frozen). Return it to the freezer until you're ready to use it.
