Brown Stew Chicken
Tender, juicy chicken simmered in a rich, deeply seasoned brown stew gravy. It's the kind of comfort food that makes the whole kitchen smell amazing.
Makes 4 servings

Ingredients:
Marinade:
1½ pounds boneless chicken breast pieces
½ lemon, juiced
1 tablespoon green seasoning (sofrito)
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon ginger
1 tablespoon Goya adobo
¼ teaspoon allspice
2 garlic cloves, minced
¼ teaspoon thyme
1 teaspoon Grace browning sauce
Sauce:
2 tablespoons olive oil
1 green onion, sliced
¼ cup onion, chopped
2 mini sweet peppers, sliced
8 grape tomatoes, chopped
8 baby carrots, sliced
1 tablespoon ketchup
Directions:
1. Put the chicken in a bowl. Add the lemon, green seasoning, onion powder, garlic powder, paprika, ginger, Goya adobo, allspice, garlic cloves, thyme, and Grace browning sauce. Mix thoroughly. Cover and let it marinade for at least 30 minutes.
2. Heat olive oil in a large pot over medium-high heat. Add the chicken mixture and cook for 2-3 minutes without stirring. Stir, continue cooking, then add the green onion, onion, and sweet peppers. Cook for another minute.
3. Pour 2 cups of water over the chicken, just enough to cover it. Add the carrots, tomatoes, and ketchup. Stir, then cover. Lower the heat to medium and cook for 20-30 minutes. Serve with rice and beans or white rice and fried plantains.
