Homemade Flour Tortillas

Soft, warm, and made from scratch! These flour tortillas are simple to make, perfectly tender, and so much better than store-bought.
Makes 16 tortillas

Ingredients:
3 cups all-purpose flour
1 tsp. baking powder
1 tsp. salt
⅓ cup extra virgin olive oil
1 cup warm water
Directions:
1. In a medium bowl, mix together the flour, baking powder, and salt. Create a well in the middle and pour in the oil and water. Stir until the dough forms into a rough ball.

2. Transfer the dough to a lightly floured work surface and knead it until it becomes smooth and is no longer sticky, which should take about 1-3 minutes.

3. Divide the dough into 16 equal pieces. Shape each piece into a smooth ball and then gently flatten it with the heel of your palm. Cover the dough with plastic wrap and let it rest for 15-30 minutes.

4. Roll each ball into a very thin circle; you should almost be able to see through it. Preheat a dry skillet, ideally cast iron, over medium heat. Cook one piece of the rolled-out dough in the hot skillet for 45-60 seconds on each side, until bubbles form and golden spots develop. Repeat this process with the rest of the dough.
5. Take the cooked tortillas off the heat, stack them on a plate, and cover them with a clean kitchen towel to keep them soft.

6. Store in an airtight container or a Ziploc bag at room temperature for 24 hours, or refrigerate for up to a week. To freeze, place parchment paper between each tortilla and store them in a Ziploc bag in the freezer.
