No-Bake Brownie Protein Bites

These no-bake bites taste like rich, fudgy brownies, but are made with nutritious ingredients and loaded with protein. They're the perfect grab-and-go snack to satisfy chocolate cravings and keep you energized. When I want something sweet, I reach for one of these instead of candy, and they hit the spot every time.
Makes 24-28 bites

Ingredients:
1 cup cocoa powder
1 cup vanilla or chocolate protein powder (I use Orgain)
⅔ cup oat or almond flour
⅔ cup maple syrup
¼ cup nut butter (almond or peanut)
¼ tsp. salt
1 tsp. vanilla extract
¼ cup milk
⅔ cup chocolate chips
2 tbsp. coconut oil
Directions:
1. Mix the cocoa powder, protein powder, flour, maple syrup, nut butter, salt, vanilla, and milk in a bowl. Press the mixture into a silicone mini muffin pan, filling each well nearly to the top.

TIP: If a silicone mini muffin pan is unavailable, an 8x8 baking dish lined with parchment paper can be used instead.
2. In a small bowl, melt the chocolate chips and coconut oil in the microwave, heating in 30-second intervals and stirring each time, until fully melted. Spoon the mixture over each brownie bite
3. Place the pan into the freezer for 20-30 minutes, or until the chocolate sets. Remove the bites from the pan and store in an airtight container in the fridge.
