Healthy Chocolate Truffles Recipe
Ingredients:
10 dates
⅓ cup oat flour
¼ cup cocoa powder
¼ cup vanilla protein powder (I use Orgain)
1 Tbsp. zero-sugar instant chocolate pudding mix
⅓ cup peanut butter
1 Tbsp. maple syrup
2 Tbsp. milk (I used 2%)
⅛ tsp. salt
½ cup dark chocolate melting wafers
Directions:
In a small bowl, cover dates with hot water and let soak for 10 minutes. Drain well.
In a food processor, combine dates, oat flour, cocoa powder, protein powder, pudding mix, peanut butter, maple syrup, milk, and salt. Blend for several minutes until everything is well mixed and a dough forms.
Notes:
If oat flour is unavailable, blend rolled oats until they reach a flour-like consistency.
Chocolate protein powder can be substituted for vanilla.
Roll the mixture into 1-inch balls. Set aside.
In a small microwave-safe bowl, melt the dark chocolate wafers for 30 seconds. Stir thoroughly. If not completely melted, continue to microwave at 15-second intervals and stir until smooth.
Notes:
You can replace the chocolate melting wafers with ½ cup semi-sweet chocolate chips and ½ Tbsp. coconut oil.
Coat the balls in melted chocolate. Arrange them on a cookie sheet lined with parchment paper or a silicone baking mat. Freeze for 5-10 minutes to let the chocolate set. Keep them in an airtight container in the refrigerator.
