Chocolate Date Fudge Puddles

These mini fudge puddles are a no-bake twist on the classic, featuring a rich chocolate and peanut butter base sweetened with dates and filled with silky chocolate ganache. They're fudgy, decadent, and perfect for satisfying your chocolate cravings with a better-for-you treat!

Makes 12-15


Ingredients:

Base

  • 15 dates, softened

  • ⅓ cocoa powder

  • ¼ cup creamy peanut butter

  • 3 tablespoons milk or almond milk

Ganache

  • ½ cup chocolate chips

  • 3 tablespoons milk or almond milk


Directions:

1. Combine the dates, cocoa powder, peanut butter, and milk in a food processor or blender. Blend until a smooth, sticky dough is formed. Press the mixture into a silicone mini muffin pan, filling each well ⅔ full. Use a spoon to create a well in the center for the ganache.

TIP: To soften dates, cover them with boiling water, let them sit for 10 minutes, then drain.


2. Heat the milk in a saucepan over medium-high heat until it boils, then add the chocolate and stir quickly until it melts and becomes smooth.


3. Spoon the ganache into the cups, chill until set, and store in the fridge.
