Romesco sauce is a vibrant and flavorful condiment hailing from Catalonia, Spain. It's known for its smoky, nutty, and slightly sweet taste, making it a versatile addition to various dishes. It is made with roasted red peppers, almonds, garlic, paprika, rice vinegar, and olive oil. It's traditionally enjoyed as a sauce for fish or grilled meats, or a dip for vegetables and bread.

Ingredients:
1-2 roasted red bell peppers from a jar
1 garlic clove
¼ cup almonds, toasted
1 Tablespoon rice vinegar
1 teaspoon paprika
¼ cup olive oil
salt & pepper, to taste
Directions:
1. Combine the bell peppers, garlic, almonds, vinegar, and paprika in a blender or food processor until smooth.

2. Stream in the olive oil until it reaches your desired consistency. Season with salt and pepper.
3. Store in airtight container in the refrigerator for up to one week, or freeze in an ice cube tray for up to 3 months.
