1 Serving

Honey Chili Chicken & Veggie Rice

Ingredients:

  • 4 oz. beef patty or ground beef

  • ½ avocado, diced

  • ½ cup cottage cheese

  • 1 sweet potato, peeled and diced

  • pinch of paprika

  • pinch of onion powder

  • pinch of garlic salt

  • pinch of black pepper

  • 1 tablespoon olive oil

  • 1 tablespoon honey

  • ¼ teaspoon Frank's RedHot (or cayenne pepper hot sauce)

Directions:

1. ROAST THE SWEET POTATOES: Preheat the oven to 425°F. On a baking sheet, mix together the sweet potatoes, paprika, onion powder, garlic salt, black pepper, and olive oil. Bake for 20 minutes, turning the potatoes halfway through.

2. PREPARE THE BEEF: Place a small pan over medium-high heat. When the pan is hot, add the beef patty and cook for 5-7 minutes, or until fully cooked. Season with salt and pepper.

3. MAKE THE HOT HONEY: Combine the honey and Franks RedHot in a small bowl, mixing well.

4. ASSEMBLE THE BOWLS: Once the sweet potatoes and beef are ready, build your bowl with sweet potato, beef, cottage cheese, and avocado. Top it with a drizzle of the hot honey and enjoy!

Optional: For added flavor, sprinkle Everything Bagel Seasoning on top.
