Delicious Chicken Bowl Recipe


Ingredients


  • 2 cups Jasmine Rice

  • 1 can whole kernel corn, drained

  • 1 poblano pepper, seeded and diced small

  • 20 oz. Boneless Chicken Breast Pieces

  • 2 tablespoons taco seasoning

  • 1 cup water

  • 4 teaspoons honey

  • ½ cup sour cream

  • ½ Lemon, juiced

  • ½ teaspoon Badia Complete Seasoning

  • 2 green onions, sliced


Cooking the Rice


  1. In a medium pot, mix 1 teaspoon of salt, 1 tablespoon of oil, and 2½ cups of water. Bring to a boil over high heat. Once boiling, add the rice and stir occasionally until most of the water is absorbed. Then, lower the heat to a simmer. Sautéing the Vegetables


  1. In a large pan (preferably cast iron), heat a drizzle of olive oil over medium-high heat until hot. Add the corn and poblano peppers in an even layer. Cook without stirring for 2-3 minutes until they are lightly browned. Season with salt and pepper. Continue cooking, stirring occasionally, for another 2-3 minutes until softened. Transfer to a bowl, cover, and set aside.


Preparing the Chicken


  1. Mix the chicken and taco seasoning (recipe HERE) together. In the same pan, heat a drizzle of olive oil over medium-high until hot. Place the seasoned chicken in a single layer. Cook without stirring for 3-4 minutes until lightly browned. Continue cooking, stirring occasionally, for 2-3 minutes until browned and cooked through. Add the honey and 1 cup of water, allowing it to cook until the liquid is reduced by half. Taste and season with salt and pepper if necessary. Turn off the heat.


Making the Creamy Sauce


  1. In the meantime, mix the sour cream, lemon juice, and Badia Complete Seasoning in a small bowl. Add salt and pepper to taste.


Combining the Ingredients


  1. Mix the cooked rice with the corn mixture. Add a drizzle of olive oil and season with salt and pepper.

  1. Serve the finished rice topped with the cooked chicken, lemon sour cream, and garnish with green onions. Enjoy!
