Healthy Sweet Potato Muffins

These chocolate chip sweet potato muffins taste so delicious, you'll believe they're a treat. However, they are actually HEALTHY!
Yields 12 muffins

Ingredients:
1 medium sweet potato, cooked, about 1 cup mashed
2 large eggs
½ Cup Unsweetened Applesauce
⅓ Cup maple syrup or honey
⅓ Cup almond milk, or 2 % milk
2 tablespoons coconut oil
1½ Cups All Purpose Flour, or oat flour
1 teaspoon Cinnamon
¼ teaspoon nutmeg
1 teaspoon Vanilla Extract
1 teaspoon Baking Powder
1 teaspoon Baking Soda
½ Cup Dark Chocolate Chips , Plus 2 tablespoons for topping
Directions:
1. Preheat the oven to 350°F. Line a cupcake pan with paper liners.
2. In a medium bowl, add the mashed sweet potato, eggs, apple sauce, vanilla, maple syrup, milk, and coconut oil. Whisk until they are fully incorporated.
3. In a separate bowl add the dry ingredients: flour, cinnamon, nutmeg, baking powder, and baking soda. Mix to combine, then fold in the chocolate chips.
4. Distribute the batter evenly into the prepared muffin tin. Top with additional chocolate chips if desired.
5. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool for 5-10 minutes. Enjoy!
