BBQ Chicken Pizza

A smoky-sweet BBQ chicken pizza topped with caramelized onions, crispy bacon bits, melty cheese, and the perfect mix of bold flavors in every bite.
Makes 2 8-inch pizzas

Ingredients:
Pizza Dough:
1 cup water, heated to 110-120°F
2 tablespoons honey
1 active dry yeast packet
2½-3 cups all-purpose flour
1 teaspoon salt
3 tablespoons olive oil
Toppings:
2 tablespoons salted butter
1 onion, sliced
1 teaspoon sugar
4-6 tablespoons Sweet Baby Ray's BBQ sauce
4 oz. chicken, cooked and shredded
6 oz. mozzarella cheese, shredded
2-4 tablespoons bacon bits
Directions:
1. Combine the water, honey, and yeast in a bowl. Stir briefly and allow it to rest for 5-10 minutes until the yeast activates and appears foamy.
2. Next, add the flour, salt, and oil. Begin with 2½ cups of flour, adding more if necessary. Mix until everything is well combined; the dough should be soft but not overly sticky. Cover with plastic wrap and allow it to rest for 20 minutes.
3. As the dough rests, melt the butter in a skillet over medium-high heat. Add the onion slices and sugar, then season with salt and pepper. Cook, stirring occasionally, until the onions are tender and caramelized. Set aside.
4. Preheat the oven to 425°F.
5. After 20 minutes have passed, divide the dough in half and form each half into a ball. On a lightly floured surface, use a rolling pin or your hands to shape each ball into a flat 8-inch circle. Place them on cookie sheets.
6. With a pastry brush, lightly coat the crust with olive oil. Next, brush the BBQ sauce over each pizza. Then, sprinkle the chicken, onions, mozzarella, and bacon bits on top.
7. Place the pizzas in the center of the oven and bake for 15-18 minutes, or until the cheese is melted and golden.
