Vanilla Buttercream Frosting

Updated: Sep 21

This traditional American buttercream is indulgently rich, creamy, and delightfully sweet. It's ideal for cakes, cupcakes, and cookies. Once decorated, the frosting's surface will firm up, keeping piped designs intact. I began using this recipe for my son's birthday cake in 2015, and it has been my preferred buttercream ever since.

Makes 3 cups, enough to cover a 9x13 cake

Ingredients:

  • ⅔ cup salted butter, room temperature

  • 4 cups powdered sugar

  • 1 teaspoon vanilla extract

  • 4 tablespoons heavy cream

Directions:

  1. In a large bowl or stand mixer, mix the butter on medium speed for 2-3 minutes until it becomes light and smooth.

  2. Gradually add the powdered sugar, mixing on low speed until combined.

  3. Add the vanilla extract, followed by the gradual addition of the heavy cream, one tablespoon at a time, until the frosting achieves your preferred smoothness and consistency. Raise the mixer speed to medium-high and continue beating for another 3-5 minutes until the mixture is light and fluffy. Use immediately.

Tips for Perfect Buttercream

Making buttercream can be simple, but a few tips can elevate your frosting game. Here are some insights to ensure your buttercream turns out perfect every time.

Choose Quality Ingredients

Using high-quality ingredients makes a difference. Opt for real butter instead of margarine. The flavor and texture will be much better. Also, choose pure vanilla extract for the best taste.

Room Temperature Butter is Key

Make sure your butter is at room temperature. This helps it blend smoothly with the powdered sugar. Cold butter can lead to a lumpy frosting. If you forget to take it out of the fridge, you can cut it into small pieces to speed up the softening process.

Adjusting Consistency

If your buttercream is too thick, add a bit more heavy cream. If it’s too thin, add a little more powdered sugar. Adjusting the consistency is easy; just do it gradually until you reach your desired texture.

Decorating with Buttercream

Buttercream is versatile. You can use it for various decorating techniques. Here are a few ideas to get you started.

Piping Techniques

With the right piping tips, you can create beautiful designs. Try using a star tip for rosettes or a round tip for writing. Practice on parchment paper if you're new to piping.

Layering Flavors

You can add flavors to your buttercream. Consider mixing in cocoa powder for chocolate buttercream or citrus zest for a refreshing twist. Just remember to adjust the sugar to maintain the right consistency.

Coloring Your Buttercream

If you want to add color, gel food coloring works best. It won’t alter the consistency of your frosting as much as liquid coloring. Start with a small amount and mix until you achieve your desired shade.

Storing Buttercream

If you have leftover buttercream, store it properly. You can refrigerate it for up to a week. Just make sure to cover it tightly. When you’re ready to use it, let it come to room temperature and re-whip it for the best texture.

Final Thoughts

This classic American buttercream recipe is a must-have in your baking arsenal. It’s easy to make and incredibly versatile. Whether you’re frosting a cake or topping cupcakes, this buttercream will impress.

So, grab your ingredients and get started! You’ll be creating delicious desserts in no time. Remember, practice makes perfect. Enjoy the process and have fun in the kitchen!
