Fudgy Sweet Potato Brownies

Fudgy, rich, and naturally sweetened with honey, these sweet potato brownies balance indulgence with wholesome ingredients.
Makes 9 brownies

Ingredients:
1 sweet potato, cooked
3 eggs
¾ cup honey
1 teaspoon vanilla extract
1 teaspoon almond extract
6 tbsp flour
3 tbsp cocoa powder
1 teaspoon baking soda
½ teaspoon salt
½ cup chocolate chips
Directions:
1. Preheat oven to 350°F. Grease an 8-inch square pan.
2. In a bowl, mix the sweet potato, eggs, honey, almond extract, vanilla, flour, cocoa powder, baking soda, and salt until smooth.
NOTE: You can create your own sweet potato puree by roasting a sweet potato and blending the flesh until it is smooth, or you can opt for store-bought canned sweet potato puree.
3. Gently fold in the chocolate chips. Spread evenly in your baking pan.
4. Bake for 30-45 minutes. Let cool and enjoy! OPTIONAL: Top with Halo Top high-protein ice cream 🍦😁
