Honey Sesame Chicken

Crispy, golden chicken bites with a side of honey sesame sauce; you can toss the chicken in the sauce if you prefer! This takeout favorite is the perfect balance of savory, sweet, and a little tangy. Serve it with steamed rice and fresh vegetables for a quick and satisfying dinner that tastes just like your favorite Chinese restaurant version.
Serves 4-6

Ingredients:
1½ pounds boneless, skinless chicken thighs or breasts
canola oil, for frying
Batter:
¾ cup cornstarch
¼ cup all-purpose flour
½ tsp. baking soda
1 tsp. salt
¼ tsp. black pepper
⅔ cup water
Sauce:
½ cup chicken stock
2 garlic cloves, minced
¼ cup honey
3 Tbsp. sugar
2 Tbsp. soy sauce
2 Tbsp. ketchup
1 Tbsp. oyster sauce
1 Tbsp. rice vinegar
1 Tbsp. sesame oil
1 Tbsp. cornstarch
1 tsp. sesame seeds
Directions:
Chop the chicken into bite-sized pieces.

Mix the batter ingredients together. Stir in the chicken.

In a large saucepan, heat 3 inches of canola oil to 350℉. Deep fry the chicken pieces in smaller batches, cooking for 3-5 minutes or until golden brown. Drain on a wired rack or a plate lined with paper towels. Repeat the process with the remaining chicken.

In a small saucepan, add in all your sauce ingredients. Bring to a simmer and cook 3-4 minutes until just thickened.

Pour your sauce into ramekins for dipping, and serve your chicken with a side of white rice and vegetables.
VARIATION: Toss the chicken pieces with the finished sauce until fully covered and enjoy!
