Soft Pumpkin Cookies

These cookies melt in your mouth! They are soft, pillowy, and delicious. This is the perfect fall dessert. Makes about 3 dozen cookies

Ingredients:
Cookies:
1 cup butter, softened
1 cup white sugar
1 cup pumpkin puree
1 egg
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon salt
2 cups flour
Icing:
1 cup powdered sugar, sifted
1/4 teaspoon vanilla
1 Tablespoon milk
Directions:
1. Preheat oven to 350°F. .
2. Cream butter and white sugar together until light and fluffy. Add pumpkin and eggs and mix well.
3. Sift baking soda, cinnamon, salt, and flour in a separate bowl. Add to pumpkin mixture and mix well.
4. Drop from spoon to cookie sheet. Bake for 10 minutes.
5. To make icing: Mix powdered sugar, vanilla, and milk together in a small bowl. Stir in additional milk if needed to reach drizzling consistency. Transfer your icing to a ziplock sandwich bag. Cut off a small bit of one corner of the bag. Drizzle onto cooled cookies in a back-and-forward motion.
